 5-Ingredient Chewy Coconut Macaroons





These delicious, chewy coconut macaroons are a quick and easy treat you can enjoy anytime. Actual cooking time may vary slightly, so check after 10 minutes the first time you make them prevent over-browning.

Prep time: 10 minutes
Cook time: 15 minutes
Makes 8-10 macaroons

Ingredients:

2 large egg whites
3 T. honey
1 t. pure vanilla extract
1 c. shredded coconut, unsweetened
¼ t. salt

Directions:

1.    Place the top oven rack in the center position and pre-heat the oven to 350°F. Line a large baking sheet with a piece of parchment paper or a Silpat® baking sheet and set aside.

2.    Using a hand mixer briskly beat the egg whites until stiff peaks form. Gently fold the honey, vanilla, coconut, and salt into the egg whites with a spatula until thoroughly combined. Do not overwork, but it may require a few folds for the ingredients to start to incorporate with one another.

3.    Scoop heaping tablespoons of the mixture onto the prepared baking sheet, leaving plenty of space in between to prevent overcrowding.  

4.    Transfer the baking sheet into the oven and bake until the cookies become golden brown on top and around the edges, around 12-14 minutes.

5.    Remove from oven and cool for 10-15 minutes before serving. Enjoy!

 

Paleo Pumpkin Spice Pancakes


Prep time: 10 minutes
Cook time: 10 minutes
Serves: 4-6

Ingredients:

6 large eggs
2/3 c. pure pumpkin puree
2 T. honey
½ c. almond flour
½ c. coconut flour
1½ t. baking powder
1 T. pumpkin pie spice
1/8 t. salt
3 T. coconut oil, divided

To serve:

1 banana, sliced thin
1/3 c. pecans, chopped
Optional: Real maple syrup

Directions:

1.    In a large mixing bowl, whisk the eggs, pumpkin puree, and honey until thoroughly combined.

2.    In a separate bowl, combine the almond flour, coconut flour, baking powder, pumpkin pie spice, and salt.

3.    Add the dry ingredients to the bowl with the egg mixture and gently fold the two together until blended.

4.    Heat one tablespoon coconut oil in a large griddle over medium heat. Once hot, spoon 2-3 tablespoons per pancake and cook for 3 minutes on the first side, then flip and cook for another 2-3 minutes on the other side. Repeat this process with the remaining coconut oil and pancake batter.

5.    To serve, stack 2-3 pancakes per serving, and top with sliced bananas, chopped pecans, and a drizzle of maple syrup, if desired. Enjoy!

 

Orange-Cranberry Bone-In Chicken Breasts






Prep time: 10 minutes
Cook time: 40 minutes
Serves: 4-6

Ingredients:

2 T. coconut oil
2 lbs. bone-in chicken breasts, with skin
1½ t. fresh sage, chopped
1½ t. fresh thyme leaves
Sea salt and black pepper, to taste
½ c. fresh (or frozen) cranberries
2 T. freshly squeezed orange juice
2 T. honey, preferably local
¼ t. ground cinnamon
½ t. ground ginger
¼ t. ground cloves
1/8 t. ground nutmeg

Directions:

1.    Place top oven rack in the center position and pre-heat oven to 400°F.

2.    Melt the coconut oil in a large, ovenproof skillet over medium heat. Season the chicken with sage and thyme. Season with salt and black pepper to taste. Place seasoned chicken in hot skillet skin-side down and cook until browned, approximately 4-5 minutes, or until it releases easily from the bottom of the pan. Turn the chicken and continue cooking for another 4-5 minutes on the remaining side.

3.    While the chicken is browning, add the cranberries, orange juice, honey, cinnamon, ginger, cloves, and nutmeg to a small saucepan. Place over medium heat and bring it to a gentle boil. Cook until the cranberries pop open and the sauce becomes slightly thickened around 4-5 minutes.

4.    Pour the orange-cranberry sauce over the browned chicken and transfer the skillet into the preheated oven. Roast until the chicken is fully cooked through and the sauce is bubbly around 25-30 minutes or until chicken is cooked through and reaches an internal temperature of 160°F.*

5.    Remove from oven and transfer chicken to a serving platter. Cover loosely and let rest for 5 minutes before serving topped with the warm orange-cranberry pan sauce and your choice of sides. Enjoy!

*Internal temperature will continue to rise to 165
°F as it rests.

Ingredients: ¼ c. coconut oil, melted, divided
3 c. butternut squash, cubed
2 medium firm apples, cubed
1 small red onion, chopped 
1½ t. fresh sage, chopped 
1½ t. fresh thyme leaves 
Sea salt and black pepper, to taste 
6 slices thick-cut bacon, chopped into ½-inch pieces*
 ½ c. pecans, roughly chopped 
2 T. honey 
½ t. ground cinnamon 
¼ t. ground cloves
 
*Use Paleo-friendly bacon to keep this recipe compliant.
Directions:
1. Preheat oven to 400°F and grease a 9x13” baking dish with 1 tablespoon melted coconut oil. Set aside.
 
 2. Combine the butternut squash, apples, red onion, 2 tablespoons melted coconut oil, sage, and thyme in a large mixing bowl. Season with salt and black pepper, to taste, and toss to combine. 

 3. Transfer the butternut squash mixture onto the prepared baking dish and spread into an even layer. Place in the pre-heated oven to roast just until the butternut squash is fork tender, around 25-30 minutes. 

4. While the butternut squash mixture is roasting, heat a large sauté pan over medium heat and add the bacon. Cook, stirring occasionally, until the bacon is cooked through and crispy, approximately 8-10 minutes. Transfer the bacon to a small mixing bowl lined with paper towels to absorb excess grease. Blot off remaining grease on top and set aside to cool for 5-10 minutes. 

5. Once cooled, discard the paper towels and add the remaining tablespoon of coconut oil, chopped pecans, honey, cinnamon, and ground cloves. Season with salt and black pepper, as desired, and toss to combine. 

6. Remove squash from oven and top with the bacon-pecan mixture. Return to the oven until the topping is nicely browned, approximately 10 minutes. Remove from oven and cool for 5 minutes before serving. Enjoy!
